POKOTABI / Raisan
礼讃
Located near Yoyogi Park, Raisan is a Japanese dining establishment known for omakase kaiseki rooted in precise dashi and seasonal ingredients, featuring Seki aji stick sushi, seasonal clear soups, and rice courses paired with sake.
01 / ABOUT THE PLACE
A short walk from Yoyogi-Koen Station into a quiet residential pocket leads to Raisan, a kaiseki restaurant that centres its dining experience on precisely drawn dashi that lets raw ingredients speak for themselves. The evening omakase course avoids aggressive seasoning and excess salt, allowing the clear clarity of kelp, dried fish flakes, and fresh seasonal elements to come to the fore.
Dishes open with plates that capture the seasonal shifts, such as char-grilled figs paired with simmered shirona greens or clear-broth soups drawing deep essence from plump clams. Seki aji bo-zushi, featuring richly marbled horse mackerel with gentle acidity in the sushi rice and fresh aromatics, is an enduring favourite reflecting disciplined kitchen craft. In cooler months, game hotpots featuring water dropwort with bear meat, or small pots of wild boar broth, present robust forest bounty reined in by the crisp backbone of dashi.
The closing rice progression is one of the house's defining highlights. Freshly cooked donabe rice is presented in phases, beginning with the fragrant niebana—the earliest scoop of tender, steaming rice—accompanied by pickles and kinpira. It then transitions into light fried rice enriched with seafood stock or preserves. Diners are also invited to enjoy raw-egg-over-rice tamago kake gohan or extra servings according to their appetite, concluding the meal on a comforting note.
The intimate dining room offers counter and table seats in a home-like, unhurried atmosphere overseen warmly by owner Shuto Kanemoto. Guests can linger over sake matched to each course, as well as wine or sours to taste. As the evening meal is served as a synchronized seating, reservations in advance are required, and arriving with a healthy appetite is recommended.
